Fresh Corn Salad
serves 6
Ingredients:
2 ears of fresh corn, boiled
1 cup fresh kale, cut into strips,then shred
½ cup fresh diced tomatoes, seeds removed
¼ cup each red and green bell peppers, diced
¼ cup red onion, finely diced
Directions:
Using a sharp paring knife, remove the corn from the husk and place in a bowl.
Add the shredded kale, tomatoes, peppers and onions. Mix all ingredients together, add Flavour De La Baye Spicy Herb Vinaigrette as needed.
